Estandarización del proceso de empaque en una línea de producción de palta Hass utilizando la norma ISO 9001 2015 para mejorar la productividad de la Empresa TAL S.A.

Abstract

El presente trabajo de investigación tiene como propósito estandarizar y documentar el proceso de empaque de la empresa TAL S.A., con base en los requisitos de la norma ISO 9001 2015. Para dar cumplimiento a este objetivo se planteó una investigación aplicada con un diseño descriptivo en la metodología. TAL S.A. es una empresa del sector agroindustrial, que se dedica a la cosecha, procesamiento y empaque de frutas y hortalizas, donde uno de sus frutos más exportados es la palta hass. El trabajo se ha dividido en 3 capítulos, el primero corresponde a la definición del problema y al establecimiento de objetivos para brindar una solución del mismo. En el segundo analizamos qué áreas estudiaremos, así como las variables que integran el trabajo de investigación. En el tercer capítulo se presenta el desarrollo de la documentación de los procesos operativos, en donde se elaboran procedimientos y formatos de acuerdo con los requisitos de la norma ISO 9001:2015, esperando que estos incurran en el desarrollo de cada objetivo establecido. Por último, este proyecto permite gestionar las operaciones en el proceso de empaque para obtener un buen desempeño, asegurar que los procesos funcionen de manera integrada, organizar las etapas del proceso y lo más importante reducir la variabilidad entre operarios.

This research was done with the purpose of getting a standard way of working and keeping record of the packing process of TAL S.A., based on the requirements of the ISO 9001:2015. In order to comply with this objective, and applied research was proposed, with a descriptive design in its metodology. TAL S.A. is an agroindustrial sector company, dedicated to harvest, process and packing fruits and vegetables, and one of the most exported products is the avocado hass. The research has been divided in 3 chapters, the first one corresponds to the definition of the problem and the definition of objectives to provide a solution of the same. In the second one, we analyze what areas we will study, as well as the variables that make up the research. The third chapter presents the development of the operational processes documentation, where the procedures and formats are elaborated according to the requirements of the ISO 9001:2015 standard, hoping that these will incur in the development of each established objective. Finally, this project allows to manage the operations in the packing process in a way to achieve a good performance, assuring that the they work in an integrated way, organizing each stage of the process and most importantly reducing the variability between employees.
